Peach Upside Down Cake 🍑🥮 I just spotted the Peach Upside Down Cake 🍑🥮 I just spotted the first peaches at the store so this cake is a must at this time of the year. It’s gluten-free, naturally sweetened, super easy to make + you’ll only need one bowl to make it. Get the recipe below and I hope you’ll enjoy the cake!

One Bowl Peach Upside Down Cake 🍑
#glutenfree

2 tbsp butter or coconut oil
250 g fresh peaches or canned peaches in juice
2 tbsp coconut sugar

200 ml almond flour
150 ml brown rice flour
100 ml coconut sugar
a pinch of salt
1 tsp baking powder
½ tsp vanilla powder
2 eggs
2 tbsp melted coconut oil
100 ml full-fat coconut milk

plant-based whipped cream or vanilla ice cream for serving

METHOD:

1. Preheat the oven to 175C/350F degrees. Cover the bottom of a cake pan with baking paper and spread some coconut oil to the sides. Place the butter into the bottom of the pan and put the pan in the oven for a few minutes until the butter has melted. 

2. Cut peaches into slices (or drain the canned peaches). Sprinkle sugar on the bottom of the cake pan. Place peaches in the pan.

3. Measure the flour, sugar, salt, baking powder, and vanilla into a large bowl and mix. Add the eggs, coconut oil, and coconut milk and mix into a smooth dough. Pour the batter into the pan over the peaches.

4. Cook in the oven for about 45–50 minutes, until the cake has a beautiful golden-brown color. Let the cake cool for a while before turning it upside down.

5. Serve the cake with some whipped cream or ice cream and enjoy!

Gingerbread Cake with Caramel Frosting 🎄 ad @fo Gingerbread Cake with Caramel Frosting 🎄 ad @foodin // What better way to spend a snow storm day than baking Christmas treats inside 🌨️ Bundt cake is a winter classic and I make one (or many..) every year. This time I added lots of @foodin organic gingerbread spice mix to the dough, which makes this perfect for the holidays. To make the cake a little extra, I added a caramel sauce on top and it’s a must have. I make it with dates and coconut milk and it’s something that you feel like eating straight from the bowl 🍯

Gingerbread Cake with Caramel Sauce 🥮
#glutenfree #dairyfree

8-inch / 22 cm bundt pan

3 eggs
175 ml coconut sugar
300 ml almond flour
200 ml rice flour
3 tsp gingerbread spice mix
2 tsp baking powder
¼ tsp vanilla powder
a pinch of salt
100 ml coconut oil, melted
200 ml full-fat coconut milk

Caramel frosting:

8 fresh dates, pitted
2 tbsp coconut oil, melted
100 ml full-fat coconut milk
a pinch of vanilla powder
a tiny pinch of salt

METHOD:

1. Preheat the oven to 180C / 350F degrees. Break the eggs into a bowl and add coconut sugar. Beat eggs and sugar with an electric mixer for a few minutes until you get a fluffy foam (coconut sugar doesn’t foam as well as white sugar but you should still get a nice foam).

2. Measure all dry ingredients into another bowl and mix well. Add coconut oil and coconut milk. Mix in the egg foam.

3. Grease the cake tin with coconut oil and sprinkle a bit of flour to the bottom to prevent sticking. Pour the batter to the cake tin and bake for about 50 minutes. The cake is ready when it has a golden-brown color, and a toothpick comes out nearly clean. Allow to cool for about 10 minutes before turning the cake pan upside down. Let cool completely before frosting.

4. Add all the frosting ingredients to a blender and blend until smooth. Spoon the frosting over the cake. Serve and enjoy!
