Kid-friendly Veggie Pancakes 🥕 Getting your kid Kid-friendly Veggie Pancakes 🥕 Getting your kids to eat vegetables can sometimes be a struggle (and for us adults too!) so I’m all about coming up with fun ways to add them into our everyday meals. So if you too are looking for ways to add veggies into your diet, here’s a couple of ways how I try to get my son to eat vegetables daily 🌿 

🥬 I add frozen spinach to a lot of our berry smoothies as it makes drinking greens super easy as you can barely notice it! Green smoothies with sweet fruits (like mango and pear) work too 🍐

🥒 Cutting vegetables into funny shapes makes it more fun so we make cucumber and carrot ’chips’ and my son usually gets to snack them while we cook dinner. 

🌱 We come up with funny names for vegetables, for example green beans are called bean swords as they’re long and sharp 🗡

🥞 I’m a pancake addict and make them weekly as they’re such a handy breakfast and snack. Besides banana pancakes, you can easily make spinach pancakes or try different veggies in them! My go-to veggie pancakes are these carrot & zucchini pancakes that go well for babies, toddlers, and adults too 💪🏼

🐒 Disclaimer: I think we’re still in the easy phase (my son is almost three) and the picky phase is ahead of us haha. Do let me know if you’ve managed to avoid it and what’s your trick!

Carrot & Zucchini Pancakes 🌿
#glutenfree 

makes 12 to 14 small pancakes

2 medium size carrots
about an 10 cm / 4-inch piece of zucchini
2 eggs
2/3 cup / 150 ml gluten-free rolled oats
1/4 cup / 50 ml gluten-free oat milk
oil for frying (I like to use coconut oil or ghee)

METHOD:

1. Peel the carrots and zucchini and cut them into small pieces. Add the vegetables to a blender and pulse until a coarsely grated.

2. Add the eggs, rolled oats, and oat milk to the blender and blend until smooth.

3. Heat a frying pan and add a bit of oil to the pan. Add a few tablespoons of dough to the pan and fry on medium heat for about a minute, then flip and fry the other side. Allow to cool for a moment before serving. Serve for example with sliced avocado and lingonberries, and enjoy!

I’m so thrilled to get to share what I’ve been working on for the last few months, which is a brand new business! It has been so exciting to found and build our company @puroagoods together with my two friends and we are really passionate about creating tasty and healthy products with the ever amazing pure Nordic ingredients 🌿

Mandarins, clementines, and anything orange on rep Mandarins, clementines, and anything orange on repeat 🍊 I always crave the color orange during wintertime and love to add citrus fruit on top of my porridges, yogurt, and pancakes or just snack them as they are. I also feel like eating a lot of bright colors give some much needed vibrant energy 🌈

I think we’re all in need of a little selfcare so here’s a few random things I do that help me feel good! 🌼

☁️ 24 to 48 hours away from all social media weekly. I like to do this on the weekends and it feels good to log off and focus on my own things and not to keep track of what others are doing. 

🧘🏼‍♀️ Meditation a few times a week. Daily would probably be ideal but that rarely happens so I’m happy if I do it a few times a week. I’m also a fan of moving meditation and feel that meditation can be so many different things than just sitting on the floor. So it’s fine if you’d rather dance and shake your booty and that way get in tune with yourself! ✌🏼 For the moments when I’m in the mood for a sit down session I like to use the @calm app (they have some really nice sleep stories too!). 

🌙 A cup of chamomile tea or @foursigmatic reishi tea in the evenings to wind me down. Can be paired with watching series or anything that does not require using my brain cause I need the chill time ✨

🌝 Magnesium and @harmoniaksm66 ashwagandha to help me get a good night’s sleep.
