Easing into 2021 with hot chocolate, citrus fruit, Easing into 2021 with hot chocolate, citrus fruit, and a whole lot of self-compassion 💫 Instead of setting resolutions or firm goals, I think my mentality for this year is to go with the flow of things and to be gentle on myself and others. While it seems like everything is pretty cray cray at times, I try to focus on the small stuff I can have an impact on. And now it looks a lot like enjoying a hot cocoa and switching into weekend mode ☁️

Hot chocolate is a mix of almond milk, raw cacao powder, fresh dates, a pinch of vanilla & a small spoonful of chaga powder (love it when I need an immunity boost). My afternoon bowl is made with oat yogurt, banana, mandarin orange, passion fruit & homemade granola.

Cozy Chai Date Bundt Cake (recipe below!) 🐻 Las Cozy Chai Date Bundt Cake (recipe below!) 🐻 Last emails, checked. Mentally on holiday, checked. Christmas menu, in progress. But not stressing about anything as I feel like I’ve already 100% checked out from 2020 haha ✨ If you’re still on the lookout for ideas and would like a treat that can be served for a few days, this gluten-free chai cake ticks all the boxes and it’s the perfect treat to snack on while cozying up at home. Wishing you all a lovely holiday season and hoping that it will give you some much needed time to relax and restore 🤍🕊🌙

Cozy Chai Date Bundt Cake 
#glutenfree #dairyfree

into an 8-inch / 22 cm bundt pan

2 eggs
1 banana
300 ml (1 ¼ cup) coconut milk
100 ml (½ cup) coconut oil
5 tbsp coconut nectar (or maple syrup or honey)
14 fresh dates or 8 medjool dates, pitted 
200 ml (3/4 cup) gluten-free oat flour
300 ml (1 1/4 cup) almond flour
100 ml (½ cup) brown rice flour
2 tsp baking powder
3 tsp chai spice (I use the @foodin spice mix)
a small pinch of salt
100 ml (1/2 cup) hazelnuts
about 80 grams of dark chocolate

METHOD:

1. Preheat the oven to 175 C / 350 F degrees. Add the eggs, banana, coconut milk, coconut oil, coconut nectar, and dates to a blender and blend until smooth.

2. In a large bowl, mix all the flour, baking powder, chai spice, and salt well together. Pour the banana-date mixture to the bowl and mix. Using a knife, cut the hazelnuts into small pieces and mix the nuts into the dough.

3. Grease the cake pan with coconut oil and sprinkle some flour on the pan (almond flour works well for this purpose). Pour the dough into the cake pan. Bake in the middle of the oven for about 55 to 60 minutes. The cake is ready when it has a golden-brown color, and a toothpick comes out nearly clean. Take the cake from the oven and allow to cool for about 10 minutes before turning the cake pan upside down. Allow the cake to cool completely before frosting and serving.

4. Melt the chocolate in a small saucepan on low heat. Spoon the chocolate on top of the cake. Garnish with crushed nuts if desired. Serve and enjoy! ✨

This year the holidays are a lot different but it’s still nice to make something good to eat and maybe bake a nice treat that you can enjoy for a couple days while lounging at home in pyjamas. That’s at least what I’m looking forward from the days ahead and just simply relaxing with zero schedules 🐻
