I’ve never been a real fan of chips but I do love a good snack. Chips and a good dip are a classic on a movie night, game night especially on sites such as 카지노 커뮤니티, or when just hanging out with friends but the usual selection at the grocery store doesn’t feel too tempting – at least for me. So what will a veggie-loving city gal eat and make for her friends for this occasions?

I think it’s kind of obvious. KALE CHIPS!

Kale is great in many ways: it’s good for your health, it’s super versatile, and you can easily grow it yourself. I’m still waiting for the magical moment of having my own garden so in the meantime I buy my kale from the store or from the markets. And besides putting it into my smoothies, salads, and stews, I make chips out of it!

The recipe is super simple and very addictive. Every time I make these they tend to disappear in a few minutes. But that just makes my vegetable-loving heart so, so happy. So go and make these for yourself and for your friends too! Enjoy! xo

Kale Chips


Kale Chips

a few big kale leaves
1 tbsp olive oil
1/2 tsp sea salt
(1 tbsp nutritional yeast, if desired)

METHOD:

1. Preheat the oven to 400 F / 200 C degrees. Wash and rinse the kale and dry it thoroughly. Be sure to not leave any water on the leaves.

2. Remove the thick stems and tear the leaves into small pieces. In a large bowl, mix the oil and salt (+ nutritional yeast) and then add the kale. Using your hands, massage the oil and salt onto the kale leaves.

3. Cover a baking tray with parchment paper and spread the kale evenly on the tray, making sure the leaves don’t overlap. Bake for about 8-10 minutes, until the chips are crunchy and slightly brown around the edges. Enjoy straight away!

Weekend mornings have always been my favorites. Usually I like to go to yoga on Saturday mornings, but on Sundays I like to take it reeaally easy. Just recharge, relax and eat good food.

I love making breakfast (and also eating it, lots of it!) and weekends are perfect for putting a bit more effort into your breakfast routine. Weekends are also perfect for hanging out in pyjamas, reading in bed and eating breakfast, that slowly turns into lunch.

To celebrate those much needed laid back mornings, we wanted to create something special with the lovely Virpi behind Vanelja, one of my favorite blogs. So here you have it, six delicious recipes for the perfect breakfast in bed! There’s hemp bread rolls, almond berry granola, green juice, lemon pancake, orange blossom chia jam, and almond milk yogurt. Honestly, I thinks we covered everything you’ll ever need after waking up.

2 big or 4 small servings

100 g organic baby spinach
4 kiwis
3 big organic apples
ice cubes, for serving

METHOD:
Rinse the spinach and the apples and peel the kiwis. Put all the ingredients through your juicer, pour into glasses, stir and add a couple of ice cubes. You could also make this by using a blender, if you don’t mind ending up with a smoothie instead of juice.

Vanilla Almond Berry Granola


Vanilla Almond Berry Granola {gluten-free}

fills one baking sheet

1 2/3 cups gluten-free rolled oats
1 cup raw almonds
1/2 cup sunflower seeds
1/2 cup sesame seeds
1 tsp vanilla powder
2 tsp ground ceylon cinnamon
1/2 cup unsweetened applesauce
1/2 cup extra virgin coconut oil
4 tbsp organic honey (or maple syrup)

METHOD:
1. Preheat oven to 200 °C / 400 °F and line a baking tray with baking paper.

2. Mix all dry ingredients and spices together in a big bowl and set aside. Melt the coconut oil at low heat and add the oil, applesauce and honey to the dry ingredients. Stir until coated and chunky.

3. Spread the granola in an even layer on a baking tray and bake for about 25 to 35 minutes. Stir after 15 minutes to get an even color. Allow the granola to cool completely before serving.

Lemon Pancake {gluten-free} & Orange Blossom Chia Jam

serves 6

1 cup gluten-free oat flour
3/4 cup almond flour
1 tsp baking powder
1/2 tsp vanilla powder
a pinch of salt
4 organic eggs
2 tbsp extra virgin coconut oil
2 tbsp organic honey (or maple syrup)
2 cups almond milk (or other plant-based milk)
1 big organic lemon, juiced
1/2 organic lemon zest, grated

METHOD:

1. Preheat oven to 200 °C / 400 °F and line a baking tray with baking paper. Mix all dry ingredients together in a big bowl and set aside.

2. Beat the eggs in another bowl until a bit fluffy. Melt the coconut oil at low heat. Add the oil, honey, almond milk, lemon juice and the grated lemon zest to the eggs and beat until smooth. Combine all ingredients and mix well.

3. Pour the batter into a baking pan covered with baking paper. Bake in the oven for about 35-40 minutes, until nicely browned and set. Let the pancake cool slightly and then serve it with orange blossom chia jam.

I’ve been writing my blog in Finnish for about a year and a half and I’ve enjoyed it greatly the whole time. It started out just as a hobby, as I wanted to try what it would be like to write from my enthusiasm towards food, nutrition and wellbeing instead of talking about it to my friends and family.

After I started blogging, I’ve become even more interested in cooking, but also in taking pictures. Along the way I’ve written quite many posts and recipes here in my blog and I thought that I’d pick a couple of my favorites from the archives and share them with you, so that this space wouldn’t feel so empty.

After looking at my archives, I decided to start with something that’s perfect for this season. I really like autumn with all its pretty colors, falling leaves, movie nights and the freedom to just stay at home and make a cup of really nice hot chocolate. But the fact that days are getting darker and there are more days with rain than with sunshine is a bit more challenging for me. So in order to survive, some really nice baked goods are truly needed.

These apple date muffins are full of flavour and they’re really moist thanks to banana, oatmilk, olive oil and honey. No butter or white sugar, just ingredients that are good for you. Besides being delicious, these muffins will also make your home scent pretty awesome. So make ’em just to enjoy the lovely aromatherapy!

Gluten-free Apple & Date Muffins

makes about 8 muffins

1 3/4 cup gluten-free flour (e.g. coconut, almond, oat and/or buckwheat flour)
2 tsp baking powder
2 tsp baking soda
a pinch of salt
1 ripe banana
1/2 cup olive oil
3/4 cup oat milk
2 organic eggs
3 tbsp organic honey
2 tsp vanilla extract
2 sweet apples
1 tsp cinnamon
1/2 cup dried dates, pitted

METHOD:

1. Set the oven at 200°C / 400°F. Mix all dry ingredients together in a big bowl and set aside.

2. Mash the banana with a fork and mix it well with the oil, milk, eggs, honey and vanilla extract until quite smooth. Combine the wet ingredients to the dry ingredients.

3. Chop the apples into small pieces and sprinkle them with cinnamon. Chop also the dates into smaller pieces. Add then the apple and date pieces into the muffin batter and mix well.

4. With the help of two tablespoons, pour the batter in muffins cups and decorate with some pieces of apple and dates. Bake for about 25 to 30 minutes.

I just returned to Amsterdam after a lovely trip to Finland. Besides finishing my yoga teacher training (yay!) I had one clear goal in mind: to eat as much berries as I could. You see, I am a huge fan of berries. Rasberries, bilberries, blackcurrants, strawberries, you name it. Living in the North has luckily some benefits and one the big ones is the abundance of wild berries full of vitamins and antioxidants.

So now that I have moved to Amsterdam, I’m really starting to miss my daily berry fix. Of course there are berries here too, but not the same kind that I’ve used to. As I was spending time in Finland, I wanted to enjoy all those really Finnish flavors, such as fresh lingonberries bought from the freezing sellers in the market. I coupled the lingonberries with some avocado and coconut cream and the end result was this super creamy and fulfilling smoothie kind of treat. It’s perfect as an afternoon snack, but it works also as a fresh dessert. If there are no lingonberries at hand, you can always replace them with other berries. This should definitely be served with a drizzle of coconut cream and maybe also with some flaked almonds or even better, with some lovely crushed dark chocolate.

serves two

1 small ripe avocado
2 cups fresh lingonberries
3 soft pitted dates
1 tbsp local honey
1/2 tsp vanilla powder
3/4 cups full-fat coconut milk

METHOD:

Chop the dates into smaller pieces. Take about 1/4 cup of the coconut milk and set aside. Add all ingredients into a high speed blender and blend until smooth. Taste, and add more honey if desired. Serve with fresh lingonberries and the rest of the coconut milk, and enjoy!

Based on the recipes that I have shared on my blog, I seem to be hooked on making different kinds of porridges. As a proof of that, this happens to be the tenth (!) porridge recipe that I type here. However, it’s the first one in English. From now on I’m going to publish my posts also in English and hopefully it makes life easier for some of you following me from abroad.

Vanilla Overnight Oats

I’ll keep this one short and sweet and say just a couple of words from this recipe. I’ve been making this a lot during the last couple of weeks as it’s been still so warm here in Amsterdam. So instead of cooking oats I’ve left them to soak overnight in the fridge. The end result is super creamy and especially perfect for those morning when you’re in a bit of a hurry. Also, it’s a perfect treat to make for sleepover guests if you’re not that type of person who wants to wake up an hour before the guests…just sayin’!

serves one

2/3 cups gluten-free rolled oats
1 tbsp chia seeds
1/2 tsp vanilla powder
3 tbsp natural yogurt (cow, goat, coconut or nut-based yogurt)
2 cups almond milk (or other plant-based milk)
+ fruits, berries, nuts, mulberries and honey to serve

METHOD:

Stir everything together in a bowl. Place in fridge overnight. In the morning, add some berries, fruits, nuts and honey on the top and enjoy your lovely breakfast.
