The coziest winter food: My Super Easy Sweet Potat The coziest winter food: My Super Easy Sweet Potato & Red Lentil Soup 🌟 Advertisement @foodin ~ I’ve been making sweet potato soup for years but just recently realized that I can add red lentils to it so that there’s more plant protein and it’s more filling too. Mind. Blown. I like soups because they are easy to make (this one especially since there is zero frying, just chopping and boiling) and it's easy to freeze them in single servings and take one out when you’re in the need of a quick meal. I like my soups creamy so I added a whole jar of the new @foodin organic coconut milk here and it makes this 👌🏼 in addition to soups, I’ve been using the coconut milk in my baked goods and on top of pancakes and porridge and it is yummy ✨

Super Easy Sweet Potato & Red Lentil Soup 🍠

#glutenfree & #vegan 
serves 6

1 large (about 700-800 g) sweet potato
3 large carrots 
15 cm piece of zucchini 
2 cloves of garlic 
200 ml (3/4 cup) dried red lentils 
1 vegetable broth cube
1 jar (330 ml) @foodin coconut milk 
1 tsp cumin 
1 tsp turmeric 
¼ tsp chili powder 
black pepper 
salt 

METHOD: 

1. Peel the sweet potato and carrots. Chop sweet potatoes, carrots, and zucchini into small pieces. Peel and chop also the garlic. Add the vegetables to a large saucepan. 

2. Rinse the lentils and add them and the broth cube to the pan. Measure enough water in the pan to cover the vegetables properly. Bring to a boil and cook for about 20-25 minutes until the vegetables have softened. 

3. Add coconut milk and spices. Puree until smooth with a hand blender. Taste and add spices as needed. Serve warm and enjoy!

I bought a second pair of these pants for myself already as I wore out the first pair (and then shrank them in the wash, I am not a master of doing laundry haha). Any tips on cute sustainable loungewear? I might need a pair as I ain’t seeing jeans in my near future 💁🏼‍♀️
Easing into 2021 with hot chocolate, citrus fruit, Easing into 2021 with hot chocolate, citrus fruit, and a whole lot of self-compassion 💫 Instead of setting resolutions or firm goals, I think my mentality for this year is to go with the flow of things and to be gentle on myself and others. While it seems like everything is pretty cray cray at times, I try to focus on the small stuff I can have an impact on. And now it looks a lot like enjoying a hot cocoa and switching into weekend mode ☁️

Hot chocolate is a mix of almond milk, raw cacao powder, fresh dates, a pinch of vanilla & a small spoonful of chaga powder (love it when I need an immunity boost). My afternoon bowl is made with oat yogurt, banana, mandarin orange, passion fruit & homemade granola.
