Living the porridge life 🌼 advertisement @fazer Living the porridge life 🌼 advertisement @fazersuomi // If you’ve followed me for a while, you know that I’m a huge fan of porridge and eat lots of it. It’s one of my go-to breakfasts and I like to switch between warm and cold oats depending on the season, but I always make sure to add lots of toppings 🫐 @fazergluteeniton has just released three new gluten-free porridge mixes and I’ve loved trying them all out. I created three very simple recipes with them and my family has been eating lots of porridge for breakfast, in the afternoon + in the evenings before bed as there are so many tasty ways to make porridge 🍯

Here are three of my current favorites!

🍑 Sadonkorjuu Overnight Oats with just two ingredients + lots of fresh fruit and berries. The Sadonkorjuu mix has a lovely crunch & lots of fiber thanks to a nice amount of seeds. 

🍓 Marjapiirakka Baked Oats with oat yogurt or whipped vanilla cream + berries. The Berry Pie mix is delicious as it is and easily turns into baked oats with just a few ingredients. 

🍌 Cooked Oats with Cinnamon Bananas & Apple Jam, the most comforting combo there is.

Late summer stress baking with this Strawberry Ban Late summer stress baking with this Strawberry Banana Bread 💆🏼‍♀️🍓 When life gets overwhelming, I’m a firm believer of baking therapy. Maybe it’s the process of creating something from scratch that helps me to get out of my head for a while or the feeling of accomplishment when you pull out a baked good from the oven. Or how good it makes me feel to see people enjoy something I’ve made. Banana bread is great for all of these purposes and it’s something that’s hard to screw up, so it’s definitely something that I keep making over and over again. This time I added some juicy strawberries to the dough and it turned out so good! Even the picky kiddos in our family loved it and that feels like a win 🌞

I originally created this recipe for @foodin so you’ll find it on their site in Finnish too!

Strawberry Banana Bread 🍌🍞🍓

makes a 24×10 cm loaf

3 ripe bananas
3 eggs
50 ml coconut oil
4 tbsp coconut syrup (or honey)
50 ml oat milk (or other plant-based milk)
250 ml gluten-free oat flour
150 ml brown rice flour
100 ml almond flour (or brown rice flour)
a pinch of salt
2 tsp baking powder
¼ tsp vanilla powder
2 tsp Ceylon cinnamon
½ tsp cardamom
about a liter of strawberries

METHOD: 

1. Preheat the oven to 175°C / 350°F. Chop the bananas into a blender. Add eggs, coconut oil, coconut nectar, and oat milk and blend until smooth.

2. Measure the flour into a large bowl. Add all the spices and mix well. Pour in the banana mixture and mix well. 

3. Chop about half of the strawberries into small pieces and carefully mix them into the dough. Save the rest for decoration and serving. Cover the loaf pan with baking paper and if necessary, grease the sides lightly with coconut oil. Pour in the batter and add a few chopped strawberries on top. 

4. Bake for about 60-70 minutes until the bread is beautifully golden brown and a toothpick comes out clean. Allow to cool. Serve and enjoy! For storing I recommend keeping the bread in the fridge.
