Garden Herb Pesto Pasta 🪴 Even though we’re h Garden Herb Pesto Pasta 🪴 Even though we’re halfway through September, I’ve been in a summer state of mind enjoying the sun + all the things our little herb garden has to offer 🌞 I’ve been leaning towards simple meals and this homemade pesto pasta is perfect for this season. I made this recipe for @puhtaastikotimainen last spring (you’ll find it in Finnish from their site) and it’s hard to beat homemade pesto once you get into it. You can go with only lots of basil, but I like to add parsley too for a bit of variety 🌿 Get the recipe below, and I hope you enjoy it! 

Garden Herb Pesto Pasta 🌿

makes about 300 ml pesto / serves 6 to 8 

400 ml tightly packed basil
300 ml tightly packed parsley
150 ml crushed walnuts
150 ml grated parmesan (or pecorino)
100–150 ml olive oil
3 tbsp lemon juice
salt and black pepper

+ spaghetti to serve

MTEHOD:

1. Measure herbs into a blender. Add all the remaining ingredients and blend on low to a rough paste. Add olive oil as needed. Transfer to a small container and let rest for a while.
2. Cook the pasta according to the instructions on the package. Drain, but leave about 1 to 2 tbsp of cooking water in the pot. Mix the pesto into the pasta. Serve and enjoy!
Pancake Cake 🥞🍒 This cake is definitely one Pancake Cake 🥞🍒 This cake is definitely one of my favorites that I keep making year after year + it’s my go-to summer dessert. This cake is just so easy to make, both kids & adults like it, and it’s a great way to enjoy as many fresh berries as possible 🫐🍒🍓 Find the recipe below, I hope you enjoy this as much as we do!

Pancake Cake with Summer Berries 🥞🍓
#glutenfree 

serves 6 to 8

Pancake:
400 ml gluten-free rolled oats
1 tsp baking powder
¼ tsp ground cardamom
a pinch of salt
3 eggs
750 ml oat milk 
3 tbsp honey (or maple syrup)
2 tbsp butter (or coconut oil) 

Filling + toppings:
whipping cream 
mashed berries (or sugar free berry puree)
banana, sliced thinly
fresh berries

METHOD:

1. Measure the oats to a blender and pulse into flour. Add all other ingredients except the butter and blend until smooth. Pour into a large bowl and let the batter rest for 20 minutes. Preheat the oven to 425F / 225C degrees.

2. Cover a baking sheet with baking paper and add 2 tablespoons of butter to the baking sheet. Place the baking sheet to the warm oven for a few minutes, until the butter has melted. Pour the pancake batter to the sheet and bake for 25 to 30 minutes, until the pancake has a beautiful golden-brown color. Allow to cool. Prep the fillings in the meantime.

3. Cut the pancake into 4 to 6 equal pieces. Assemble the cake by piling pieces of the pancake, whipped cream, mashed berries, banana slices, and fresh berries on top of each other. Finish with lots of fresh berries, serve, and enjoy!
